I had a look at the websites and will pass the details of these
to the Doc.
However, I could not find the specific information he is initially
looking for, i.e. the actual constituents of wine, especially
L-arginine. Can you let me know how/where I can find this 'list'
or whom I can ask?

The first response to your question has come in from Dr. Phil
Norrie in Australia.
L- arginine is found in wine at levels of between ..02 and.1g/l.
His source was making good wine by Bryce Rankin 1993 edition,
page 297.
Re health implications, apart from being an essential amino acid
- little info received yet.
